What type of notes should I be making?

Hi

I am struggling to make some decent notes on players - a lot of my notes are about one or two hands that I get to see the cards on showdown.

A lot of the notes seem kind of pointless - What sort of notes are the best to write?  Is it good to make on the isolated situations?  If I see a guy raise a lot but never see cards not sure what I should be doing?

Any help would be great
