Apex hotels in Grassmarket area are set up with business visitors in mind, wifi there should be good enough, failing that several have wired connections you can use.

Apex is a really nice hotel. Not sure about the wifi for grinding but it was good for the random stuff. I was in the grassmarket one, not sure if there are others.
The Balmoral or the Glasshouse both have excellent WiFi.
The Balmoral is wonderfully old school, & right by the awesome Waverley Station (2nd largest by area in the UK), whereas The Glasshouse is chic & modren, but very good.
The Balmoral has a great big clock on the roof, which is deliberately set 3 minutes fast, to help ensure people who are crushing to catch a train get there early. It also serves Afternoon Tea to the accompaniment of a harpist. Yes, a harpist.
