Assume you had staked £100 on Fulham being relegated.
That £100 is "out of circulation" until the end of the season now. You can't lose it. They can't win it. They can't spend it as it's ring-fenced. It's dead money for 9 months.
By paying out now, the money goes back into circulation, & you can lose it to them. Or win with it, but most of all, that £100 becomes active again. And that £100 can slosh backwards & forwards between you & the bookie many, many times, earning them money. Eventually, of course, you will lose it.
