gutshots

hi everyone want to know if its ok to risk 3/4 of your stack on a gutshot ????
the reason i ask is simple ,i dont play gutshots unless very low stacked or over stacked normal i would say for most playes....
 
in the 6k open torny last week i had worked my way up to 3k got done by lower pair down to 1k thats fine
worked my way up to 3k again and done by lower pair again it happens so ok 
 
work my way up to 3.5k again moved to a new table....came up against a player with 13.5k stack
 
me bb aq spade raise from 300bb  to 1000  
him button call 1000   flop qh 6s 4s  
 
me raise 1500 
him re-raise me all in 
me call           cards over me a q spades him 10 8 spades
 turn =9 spades game over he hit his gut shot flush but mine was bigger 
 
now me 7.5 k him 10k     

so now  me bb poc 10 raise from 400 to 1500 
him button call 1500
flop =8d 4d 2c  
 
me raise 2.5k
him call me all in
me call    cards over me 10 10 him qd 10 d 
turn kc river qs so hits top pair 
 
this player now gos and wins the torney.....is it where i go wrong because i dont gutshot more often????

    gutshot is needing 1 card to make a straight, and a flush is just a flush

    some players do over value there draws but hes probably thinking that it was hard for you to connect with both flops so playing his hand strong he gets two chances to win, 1 you fold 2 you call and he hits his draw,
    the first hand hes just gambling

    in the case of the KQ hand he had 2 overs +fd so hes actually a slight fav in the hand when it goes in/.
