Las Vegas is home to the best cardroom in the world! It's at Caesar's Palace - and they have an excellent daily tournament starting at 12pm, plus a variety of NLHE & LHE cash games.
While you'll find $50 / $60 tourneys at most casinos on The Strip, they're all crapshoots. Caesar's offers a proper structure and excellent value for money. Plus, it's a comfortable, aesthetically pleasing environment.

Read my blogs which covers some good lowish buy in tourneys, I second the Caesars Palace recommendations and I wanted to play the Planet Hollywood tourney but never got there. You get 4500 starting chips at PH so it's a good shout. I found Excalibur, O'Sheas and Flamingo to be full of weak cash players, MGM Grand was a bit harder cash wise but some weak tourists there.
I second James about O'Sheas and Casino Royale for good fun at low stakes, O'Sheas tourneys are 7pm, 9pm, 12 midnight and 2am, drunken fun for 45$ and even I cashed in one!! Play strip poker, cash tables right on the sidewalk! Casino Royale has great craps tables and roulette and cheap drinks.
Venetian, Wynn and Bellagio are posh card rooms with higher buy ins.
I am very jealous, we are planning to go back in March.
I too loved Caesars. Also really enjoyed the Treasure Island card room - small but very friendly and good fun, and quite liked the MGM Grand tourney too.
Other things to do - the Grand Canyon trip really is amazing. I went with Maverick and it was worth every cent. Downtown Vegas is also worth a visit. I even found a place there that brews its own beer, if you like that kind of thing.
If you are based at the stratospere,just up the strip the sahara has quite good daily $40 tourney with a$20 add on taken whenever you want within 1st hour.The times are 11am/7pm/11pm ithink? I managed to chop one of these when 3 players left for about $550 whilst there in february.You'll love it, have a look at as many of the hotels mentioned as you can,just can't beat the place.
