Lately when u know you are winning and your opponent is fishing i dont seem to be able to stop them fishing with any size bet if you know somebody is fishing would i be better off folding or just accept its part of the game or because of my bankroll i play smaller touneys ie 2.30 bounty hunters that some players just dont care

Sir, you do not WANT them to stop fishing!
As a rule of thumb, post flop, most "draws" are at LEAST 2/1.
Let them fish, they are providing your food.
Embrace the fishermen.
Great advice from Simuk here and Tikay is also right, we don't want to scare the fish away in a Bounty Hunter, but if they are going to fish, then we want to make them pay for premium bait.
It's not hard to lay a hand down on the Turn or the River either if the board is looking dangerous. Personally I like to use as many of the community cards as I can to strengthen my hand and give me a better idea of what I may be up against before getting it all in.
Its suprising how many players will still call top pair in a Bounty Hunter even when you have an absolute monster.
Let them fish, But make them pay.
