could I have played these sets any better

Sharing the tables with weak passive players makes getting the maximum value as a set very difficult and the time I find it most difficult of all is when I'm sitting out of position.
Here are a few instances here the players in each and every occassion a very passive and most times all I can expect is a min raise, could I have played these more aggressively on the flop and turn?

    Most loose passive fishy players are completely inelastic to bet sizing post flop in my experience/opinion. If they like something about their hand they'll call bets regardless of whether they're half pot or full pot.

    All the hands above are played fine but I think you are missing value by not going considerably larger with your bets/raises post flop against these types of players. Of course if sucks when we hit our set on the flop and they fold to a pot size bet - as a thinking player it's easy to assume that our sizing scared them off. However, they would probably have folded to a 1/3 pot size in the same situation too. Even when there are times that going with really large sizings with flopped sets loses your 'customer', you will more than make up for it in the long run with the added value you get when they come along for the ride.

    Assuming your plan was to check/ call river in the first hand if you value bet you'd lose the same amount of money versus better hands and win more versus ones you beat

    In hand 1most days I would be value betting my set on that river but on this occassion that river card was extremely bad being not only a straight but also a flush

    MAybe I was far too much a thinking player and not taking into account how loose and passive these players are
